Recipe Swap #4

Cinnamon Ripple Muffins

Ingredients:
Ripple:
½ cup brown sugar
4 tablespoons butter, cut in pieces
¼ cup flour
2 teaspoons cinnamon
Batter:
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup butter, @ room temp.
2 eggs
1 teaspoon vanilla
½ cup sugar
½ cup milk

Combine ripple ingredients, use mixer to blend, set aside.
Heat oven to 400 degrees.
Line or grease twelve muffin cups.
Whisk together flour, powder, soda and salt. Set aside.
Beat butter and sugar with mixer.
Add eggs, milk and vanilla, mix again.
Add dry ingredients.
Hand mix in ripple.
Divide batter into muffin cups.
Bake approximately 17 minutes.
Use toothpick to test. Makes 1 dozen muffins.
