As promised here are a couple recipes my kids LOVE. Enjoy!!!
Pizza Dough
Ingredients:
1 package active dry yeast (2 ¼ tsp)
1 cup warm water
1 tsp sugar
1 egg
3 Tb. olive oil
¼ tsp. salt
3 ½ to 4 cups flour (may be mix of white and wheat)
Baking stone
1. In small bowl proof yeast by mixing yeast with warm water and 1 sugar. Mix well and let set 5-10 minutes until mixture starts to foam and gives off yeast smell, proving cultures are active.
2. In large mixing bowl, combine egg, oil and salt. When yeast has proofed add, along with 1 ¼ cup flour.
3. Beat with mixer on low 30 seconds and then high speed for 3 minutes.
4. Add as much remaining flour as possible. Knead by hand 6-8 minutes. Dough will be stiff.
5. Lightly grease a large bowl, add dough and cover with damp towel. Place in warm place for first rise until doubled, about 30 minutes.
6. Punch dough down.
7. On baking stone roll out dough (do not use all dough, cut off about ¼ and disregard- for a circle pizza).
8. Let rise another 20 minutes.
9. Top with pizza sauce, cheese and favorite toppings.
10. Bake at 375 degrees for 20-25 minutes until desired doneness.
Note: Use all of dough to make a 16 x 12 rectangle. Cut off ¼ of dough for regular sized circle pizza.
Use extra dough to make breadsticks. Form into sticks, spray with butter and sprinkle tops with Italian seasoning. (to form into breadsticks- roll out dough, cut into strips and twist.)
Thanksgiving Rolls
Ingredients:
1 cup milk
½ cup margarine- melted
¼ cup sugar
2 eggs
¾ teaspoon salt
4 cups all purpose flour
1 package yeast
1. Put milk and butter in the microwave to melt.
2. Put all ingredients in order into the bread machine on the dough cycle.
3. Separate dough in to 16 balls. Place on a greased cookie sheet.
4. Let the rolls rise for 30 minutes.
5. Brush each roll with 1 egg and 1 tablespoon water.
6. Cook at 375 degrees for 16 minutes (maybe a little less).
